my brother and his business partner own evangeline’s located in tuscaloosa, alabama. just for fun, he will periodically email me their current menu or chef's weekend features, and i received this a couple of weeks ago. the menus are always so fun to read and make me hungry every time i read them. i am gonna have to go with the fresh pan seared mahi-mahi fillet. if you're ever in tuscaloosa, alabama (maybe on your way down to the gulf for vacation), swing by and experience evangeline's...i'll let my brother know you're coming.
